Salisbury Steak in Onion, Mushroom and Red Wine Gravy and Veggies

One of my all time favorite meals I was introduced to when I planted one's English feet upon Canadian soil was Salisbury Steak it was everything I loved .... MEAT and VEG,  Needless to say my eating habits have drastically changed since the day of Extremely well cooked dry ass meat and Mushy veg! I mean who knew that you could eat veggies that still had a bit of a crunch! 
Anywho I am getting very much off topic as per usual .... Back to Salisbury Steak!.

When starting this diet i was dreading the Low fat healthier versions of my favorite things this being one of them, but I was pleasantly surprised with this!

Here's what you need:

1 lb EXTRA LEAN ground beef (Mince Beef for the horrid lot oversea's)
2 Medium Onions
5 Decent sized Mushrooms
1 Egg
1/4 Cup Oat bran (Breadcrumbs if you are not Carb restricted)
1 teaspoon Minced Garlic
Salt and Pepper
1/3 Cup Red Wine
2 Cup Reduced Sodium Fat Free Beef stock
2 Teaspoon Cornstarch
Extra Virgin Olive Oil
What ever Veggies you feel like.

Here's what you do:

In a bowl mix Ground beef, 1 Onion(Diced), Garlic, 1 Egg, Oat Bran and Salt and Pepper once well mixed form into Burger patties.
Heat a high sided frying pan with a good splash of olive oil in the pan,  Once pan is hot add patties and cook once cooked take out of pan and put to the side.

Slice other onion and mushrooms and then fry them in the same pan you just cooked the patties in fry until browned and soft then add red wine and cook until wine is at a rolling boil then add beef stock.

In a glass mix corn starch with same amount of water (2 teaspoon) add to the gravy and cook until gravy thickens (If it gets to thick add water).

Once gravy is the thickness you want it add the patties back into the gravy and simmer for about 10 mins, while you get your plates and shit ready.

Serve with veggies and Demolish!

Salsa Fresco, Feta and Spinach Stuffed Chicken Tits!

This was very Fecking tasty even if I do say so myself!
This is also a perfect recipe/meal for releasing aggression and you will have to beat the snot out of said chicken tit's with a pan.

Here's what your need:
Chicken Tit's (we used 2 as there is 2 of us eating)
2 Tomato's
1 Medium Purple Onion (Regular Onion is fine too)
1 Clove of Garlic
1/2 a Lime
Cilantro
Salt
Pepper
Feta Cheese (I used about 1/4 Cup)
 Fresh Parmesan Cheese (I used about 1/8 Cup. You can also use the powder)
Spinach.

This is what you do:

First things first make the salsa which is easy all you gotta do is dice the Tomato and Onion and mince the garlic add all those to a bowl and cover with the juice of half a lime, Crumble Feta into mixture and grate the Parmesan into this also. Mix well and let stand.

Now put the Chicken Tit's on a cutting board and cover with Plastic wrap (This is the part where things could get messy).
Once Chicken is covered pound the shit out of with a heavy object to flatten it (I use a frying pan).

Take flattened chicken and put some spinach on it and then some of the salsa mixture and then roll the chicken up hiding the spinach and salsa in the center,  Do this for all your Chicken.

Put rolled Chicken into an oven safe dish and cover with any left over salsa.

Bake uncovered at 375F or Gas Mark 5 until chicken is cooked.

Serve with a banging salad and Demolish!

Spicy Veg Soup!

Lets this start post by saying how awesome soup is can we?,  I love soup of all kinds,  people are often shocked at how easy soup is to make so I am going to share with you a new one I made and I gotta say I thought it was #FUCKINGDELICIOUSNESS! although strangely Wifey didn't like it which is bizarre as she normally has very good taste I mean come on she did marry me FFS, However on this occasion i think her taste buds are being very badly behaved because as stated above I loved it!

Here goes!!

This is what you will need:

1 Cauliflower 
2 Crowns of Broccoli
3 Carrots
1 Medium onion
3 Celery Stalks
Garlic 
Chicken Stock
Veg Stock
Olive Oil
Salt 
Pepper
Chili Powder

This is what you do:

Cube up Onions, Carrots and Celery.  Mince Garlic Add of of those to a pan with a splash of Olive oil and cook until starting to soften then add chopped Broccoli and Cauliflower continue to cook for about 5 Min's then add Stock to cover all the veggies and then some,  Bring to the boil and add the amount of chili powder you want (I like mine Spicy) then add salt and pepper to taste and let the stock boil until veg is SOFT.  Remove from the heat and blend until smooth (I use a immersion blender) Once blended well stick it in a bowl and CHOW down (If you are one of those lucky assholes that can eat bread I would for sure have this with a big crusty roll)

Old Spaghetti Factory ... mmmmm meatballs!

So for cheat day we had Tacofino for Lunch ( amazing as always!)
Then we hit the Royal BC Mueseem ... Not my cup of tea but because i adore my wife and she likes that kind of stuff i gladly went :D (It was utter shite!) however that being said I got to spend the entire day with my beautiful wife which was awesome!.

So after the Kak (Slang for shite) we went to the Old Spaghetti Factory for dinner (I LOVE pasta).

My dinner as pictured below was amazing however Teena's Manicotti was the shits :( but again never the less it was a wonderful day!

It's CHEAT DAY!!! ... CAKE!!!

OK so let's not piss around ... Who doesn't like Cake? oooo I love a nice bit of cake!.
So after reading that first line of poetic genius i bet your thinking "What the feck is Diet about cake?" well here goes ... FECK ALL is diet about it and i fully blame two people for this lack of judgement and total disregard for ones diet... Samantha Mchugh and Daz Thornton (Barstards!) .... sorry i see i am going completely off track here ..i will explain i saw that Sam had posted a picture of the most delicious looking masterpiece of fatty floury chocolate goodness and then to top it off i awoke on Monday (Cheat Day) to see that Daz had posted a picture of a BEUATIFUL looking Victoria Sponge Cake ... what followed can only be described as a Hot Mess!.

I peel my self out of bed my hair looks like something you would see upon the head of one of the "Emu" (Or whatever the feck they are calling themselfs)  youngster types ... for those who are now completely lost .. i was trying to comically discribe the state of my hair ... it was a fecking mess!.

So with "Emu" hair and Superman fleecy pants i go all two fat ladies and start to pull out Bricks of butter and flour to create my heart stopping masterpiece you see below and now i will share the recipe with you.
P.s ... I would like it to go down on record that i did not eat this whole cake as much as i wish i could of! 

Here's what you need:
 
1 cup of flour
1 cup of room temp butter
1 cup of icing sugar
2 eggs at room temp
1/2 cup of milk at room temp
1 and 1/2 teaspoon of baking powder
1 teaspoon vanilla
Jam (I used mixed berry)
Butter cream (1/2 cup of butter 2cup of icing sugar and a splash of vanilla Mixed together)


Here's what you do:

Preheat your oven to 400 degrees F
Sift flour baking powder
Cream together butter and sugar 
Whisk eggs add slowly to butter and sugar
Now add milk and flour mix bit by bit
add vanillia and mix

pour batter into a cake pan and bake for about 20 mins or until u poke it with a toothpick and the pick comes out clean.
Let cake cool.

Once cake is cooled slice in half and spread both sides with jam and butter cream then put back together dust with icing sugar and demolish!

Chicken Ragu Stylee

I wanted to make something quick, easy and flavorful for dinner and since Trollston wasn't going to be home until after 9 I wanted something on the lighter side aswell. I had been looking at pictures earlier in the day and came across a picture of a chicken dinner that my mom had made and it stayed on the brain for the day. So, I made a spin off version  of her masterpiece. .and let me tell ya it was a masterpiece to still be in my phone gallery lol! Our sunshine Diane McHugh across the pond might like this
What you need:
4 chicken pieces..I used boneless skinless.
1 medium onion diced
1 tomato diced
1 stalk of celery diced
1/2 yellow pepper and 1/2 red pepper diced
6 med mushrooms or 3 large ones sliced thin
1 small carrot diced
1 glob of minced garlic
1/2 cup of tomato sauce(not ketchup ) if you have some in the fridge
1 good size glob of chicken Better than Boullion chicken stock
Salt and pepper
Chili powder
Garlic plus
What you do:
Season chicken with salt and pepper,  chili powder and garlic plus and fry on medium heat with a dab of olive oil. Don't forget to Season the other raw side once you put it into the pan. Once both sides are seared add a splash of water to deglaze the pan the  add your diced veggies. I pulled the chicken up on the top of the veggies and let the veggies cook down on med heat. Put a lid on the pan for 10 to 15 min to cook the chicken through then turn the heat down and rest the lid half off to let the steam out so everything can reduce down to a nice thick Ragu.
When the sauce has very little moisture left you should be good to plate it up. A nice helping of the Ragu with chicken on top with some parmesan plained on top with a dollop of sour cream to smooth it out.
I was happy with how this turned out..it was packed with flavor and healthy.. for you lucky bastards that can carb it up..some nice crusty bread would be a nice accompaniment. Enjoy!

Homemade Chicken and Veggie Asian Styled Soup

I was pleasantly surprised at the yumminess i created here i gotta tell ya ... i stood by and looked at myself in modest amazement!

Here's what you need:
Chicken Tits
Onion
Celery
Garlic
Cashew nuts
Pepper
Carrots
Corn
Water chestnuts
Sugar snap peas
Mushrooms
Green beans

Broccoli

Beef and Chicken Stock

Asian salad dressing

Olive Oil
Salt and Pepper

Here's what you do:

In a pan heat up a good splash of olive oil,  Cube up chicken tits and set aside,  now is where you choose if u want chunky or sliced veg ... I like it chunky ;).  Chop Onions, Carrots and Celery put those into the pan with 1teaspon of minced garlic fry until starting to soften then add chicken cubes and fry until chicken is starting to brown add about 14 cup asian salad dressing and continue to cook,  once chicken and other veg is well coated add remaining veg and continue to fry for about 5 mins then add your stock and salt and pepper to taste and allow to simmer until your veg is the texture u like ... this is thebomb.com supper yum!

The moment you have all been waiting for ... Duncan Garage House Salad Dressing Recipe

OK people when my self and Teena call this stuff Angel's Piss we ain't kidding HOLY SHITBALLS it is amazing!

Yes, here it is!!!!! Makes 2 & 1/2 cups.

1/2 cup engivita yeast

1/3 cup water

1/3 cup soy sauce or tamari

1/3 cup apple cider vinegar

2 tbsp. crushed garlic

1 1/2 cups sunflower oil

Put yeast. Water, soy sauce, apple cider vinegar and garlic into a blender start to blend and add oil slowly! once it is all blended put into a container in the fridge will keep for about 2weeks.

Tuesday Blackened Chicken and salad.

This one is a piece of piss to make and is perfect for a rushed thrown together meal!

Here's what ya gonna need:
Chicken Tits.
Cayenne Pepper
Paprika
Garlic
Salt
Pepper
Olive Oil
Salad Stuff!

Here's what you do:
Mix together Cayenne pepper (THIS IS SPICY) i used 1/2 a teaspoon and 1teaspoon paprika Minced garlic i used 1/2 teaspoon and salt and pepper to taste,  put chicken tits into a ziploc bag add the spices with 1teaspoon of olive oil close the ziploc bag (Que the sexy music) and rub said chicken tits until coated;).  Once chicken is well coated fry in a HOT pan until cooked.  Serve with a salad our salad consisted of ... Romaine lettuce., Red onion,  Cucumber,  Cherry Tomato's, Bean sprouts, Peppers, Mandarin oranges, Cheese, Mixed nuts and cranberries and of course covered in the Angel piss salad dressing!

Cheat Day Monday Supper

El Fisho Taco!!
As you can see from the title for supper we had fish taco it was homemade and yum!.
OK here's the details...

What you need:
Flour Tortillas
Cod
Cabbage
Carrots
Tomato
Onion
Garlic
Jalapeno Pepper
Lime
Cilantro
Mayonnaise
Cayenne Pepper
Paprika
Flour 
Baking Powder
Salt and Pepper
Water.

What you do:

Salsa Fresca:
Dice Tomato, Onion, Garlic and Jalapeno mix together in a bowl with the juice of half a lime and minced cilantro to taste.

Batter:
Beat the shit out of 1 cup of flour, 1/4 cup of baking powder, 1 cup of water and salt and pepper to taste.

Fisho!

Cube up Cod and put into a bowl of flour cover all the Cod with flour then dip each chunk of cod into the batter coating it evenly, then fry in HOT oil until batter is golden brown.

Toppings:
Shred Cabbage and Carrots.

Add Cayenne pepper and paprika to mayo until its spicy enough for your gob!

Putting it together:

Warm your tacos (HAHAHA) in the Microwave for a few seconds then put fish first then top that with shredded cabbage and carrot then top that with Salsa Fresca then add a couple of decent dollops of spicy mayo and a good squirt of lime and begin to cram it into ones face!

As the picture shows below we served it with a dollop of rice smothered in Angel Piss (House Dressing)

there is only one way to describe this meal .... Fuera de este fecking mundo!!!

Monday Funday!

For cheat Monday we hit up the Duncan Garage, as we had to pick up some more of that amazing dressing. The selection today was awesome, and we splurged!  I had the same pizza as Trolls but the crust on mine was sourdough and it was scrumdiddly! 
The gluten free cheddar and green onion scone was to die for, it had a butter crust on top with just a little sprinkle of cheese.

The house salad was absolutely fantastic and definitely worth it's price.  The small is what is pictured and it's far from small.  The tenderest greens with fresh alphalfa sprouts, shredded beets, red cabbage, carrots, sunflower seeds and some chickpeas on the side. Then topped with my favorite part..The dressing..omfg it's good!  For 4.50 it beats the pants off subway any day of the week. 

The quality of the food was in the top of the best in town and I look forward to our next trip there! If you are tired of Duncans same ol same ol...drop by the garage for a change!  

It's Cheat Day!!

So every Monday is cheat day for us,  meaning we can eat ANYTHING we want lol.  In this entry we will do my (Trolls) lunch! Pictures below! We went to the Duncan Garage cafe and bakery (one of my new favorite places).

The pizza was a gluten free crust topped with artichoke, cherry tomatoes, spinach, black olive pine nut (insert pine cone joke here for Daz), onion and cheddar cheese it was Amazing I would for sure recommend it. 

Then the Soup ... let's all just take a moment to thank the Lord above for soup! ... Anywho this was a vegetable barley soup served with a wedge of tri-colour bread and holy shit ball's let's talk about this bread!,  The diet I am on is a low carb diet so bread is a no no for me until cheat day that is, which believe me is a good thing now that we have found this bread it honestly is that friggen good! You gotta try this!

Then the bar you see is a Raw macaroon bar, I can not tell you what is in it because I don't know but I can tell you it is #FuckinDelicious!

So in closing you guys gotta eat here!!!


Birthday Dinner at Bridgeman's Bistro!

I had been wanting to try this place since the summer but had never made it..for my birthday Trolls surprised me with dinner there..I was chuffed! I don't have a picture of the view because it was dark out but dinner was spectacular! 

Top sirloin steak cooked perfectly to medium,  roasted golden beets, spaghetti squash, sautéed carrots and asparagus spears.  The vegetables were super flavorful and it was nice to get the squash and beets for a change...something other than usual broccoli and cauliflower.. served on one end of the steak was an onion jam. I had never tried it before and was pleasantly surprised as it was bangin! Sweet and sticky little topper.  The demi Glace was very flavorful for plate scraping, and blended well with the potato pave`..another dish I had never tried..much like a dense scalloped potato dish.  Everything was delish and can't wait to visit again. Perhaps steak and lobster Thursday's. .who's in?

Our Kickass Lettuce Wraps!


Kick Ass Lettuce Wraps!
OK ... Sweet Baby Jesus and Mother Mary ... These things are to die for!

Here is what you need:
2 Chicken Tits
1 Romaine Lettuce
1 Lime
1 Carrot
1 Cup of Bean Sprouts
1 Onion
3 Mushrooms
1 Tbsp Peanut Butter
3 Tbsp Duncan Garage House Dressing 
(This shit is like Angel's pissing on your tongue!).

Here is what ya do:
Slice your onion and mushrooms thin..ish.
Slice up your chicken tits,  put all the above in a frying pan and fry,  Once almost cooked add your peanut butter and Angel piss (House dressing) to the pan and continue to fry until cooked.

Wash and shake your lettuce(HAHAHA) and put on a fancy cutting board (Less dishes) for serving!

Julienne your carrots(we have a fancy peeler that does this .. Thanks Mom x).

Wash bean sprouts under cold water and put those along with the carrots on your fancy board.

Garnish with a lime cut into quarters and more Angel piss (house dressing) in a little bowl to add to the wrap!

Build your wraps and chow down Charlie Brown! (Side note from the wife ... Get Napkins!)
