OK so let's not piss around ... Who doesn't like Cake? oooo I love a nice bit of cake!.
So after reading that first line of poetic genius i bet your thinking "What the feck is Diet about cake?" well here goes ... FECK ALL is diet about it and i fully blame two people for this lack of judgement and total disregard for ones diet... Samantha Mchugh and Daz Thornton (Barstards!) .... sorry i see i am going completely off track here ..i will explain i saw that Sam had posted a picture of the most delicious looking masterpiece of fatty floury chocolate goodness and then to top it off i awoke on Monday (Cheat Day) to see that Daz had posted a picture of a BEUATIFUL looking Victoria Sponge Cake ... what followed can only be described as a Hot Mess!.
I peel my self out of bed my hair looks like something you would see upon the head of one of the "Emu" (Or whatever the feck they are calling themselfs) youngster types ... for those who are now completely lost .. i was trying to comically discribe the state of my hair ... it was a fecking mess!.
So with "Emu" hair and Superman fleecy pants i go all two fat ladies and start to pull out Bricks of butter and flour to create my heart stopping masterpiece you see below and now i will share the recipe with you.
P.s ... I would like it to go down on record that i did not eat this whole cake as much as i wish i could of!
Here's what you need:
1 cup of flour
1 cup of room temp butter
1 cup of icing sugar
2 eggs at room temp
1/2 cup of milk at room temp
1 and 1/2 teaspoon of baking powder
1 teaspoon vanilla
Jam (I used mixed berry)
Butter cream (1/2 cup of butter 2cup of icing sugar and a splash of vanilla Mixed together)
Here's what you do:
Preheat your oven to 400 degrees F
Sift flour baking powder
Cream together butter and sugar
Whisk eggs add slowly to butter and sugar
Now add milk and flour mix bit by bit
add vanillia and mix
pour batter into a cake pan and bake for about 20 mins or until u poke it with a toothpick and the pick comes out clean.
Let cake cool.
Once cake is cooled slice in half and spread both sides with jam and butter cream then put back together dust with icing sugar and demolish!
